Ingredients
  

For the Crispy Sweet Potatoes:

  • 2 medium sweet potatoes about 1.5 lbs / 680g, peeled and diced into ½-inch cubes
  • 2 tbsp avocado oil or coconut oil melted
  • ½ tsp turmeric
  • ½ tsp sea salt

For the Turkey Hash:

  • 1 lb 450g ground turkey (pasture-raised preferred)
  • 1 small onion finely diced
  • 2 garlic cloves minced
  • 1 tbsp avocado oil or coconut oil
  • 1 tsp dried thyme
  • ½ tsp ground turmeric
  • ½ tsp ground ginger
  • ½ tsp sea salt adjust to taste
  • 1 cup fresh spinach or kale optional, for added greens
  • 1 tbsp coconut aminos optional, for umami flavor
  • Fresh parsley or cilantro chopped (for garnish)

Instructions
 

Prep the Sweet Potatoes

  • Peel and dice sweet potatoes into ½-inch cubes. Pat dry with a paper towel to remove excess moisture.
  • In a bowl, toss sweet potato cubes with avocado oil, turmeric, and sea salt until evenly coated.

Air Fry the Sweet Potatoes

  • Preheat air fryer to 400°F (200°C) for 3 minutes.
  • Add sweet potatoes to the air fryer basket in a single layer (work in batches if needed).
  • Air fry for 15–18 minutes, shaking the basket halfway through, until golden and crispy.

Cook the Ground Turkey

  • While sweet potatoes cook, heat avocado oil in a skillet over medium heat.
  • Add diced onion and garlic. Sauté for 2–3 minutes until fragrant.
  • Add ground turkey, breaking it into crumbles with a spatula. Cook for 5–6 minutes until no pink remains.
  • Stir in thyme, turmeric, ginger, and sea salt. Add spinach/kale (if using) and cook until wilted (2 minutes).
  • Optional: Drizzle with coconut aminos for extra flavor.

Combine & Serve

  • Add crispy sweet potatoes to the skillet with turkey. Toss gently to combine.
  • Garnish with fresh parsley or cilantro. Serve hot!
